All of our bread is baked on the morning of markets and delivery to keep it as fresh as possible before it’s in your hands. Our bread has no preservatives, so it will go stale faster than the average grocery store sandwich bread. We recommend consumption within 3 days for optimum taste, or slicing your bread and sticking it in the freezer to defrost as needed. To refresh bread, run the slice under water and toast as usual.
When possible, we aim for organic and limited ingredients. With a focus on local produce, certified organic is not always possible due to the high costs on small, family farms. The ingredients used are grown naturally, sourced locally when possible, and pesticide free. Our goal is always products that taste delicious with ingredients you recognize and doing our part to support the local agriculture community.
We do not use any commercial yeast in our breads, they are all leavened exclusively with wild yeast, aka a sourdough starter.
A combination of a whole lot of trial, error, and flour at 2am, along with heirloom family recipes I am honored to continue.
We follow strict potential allergen labeling per NYS guidelines, however we are not a gluten or nut free kitchen.

While we totally get wanting your favorite flavors all the time, our available jam is based on what fruit is in season. In order to support local WNY farms, we limit sourcing produce from outside the area.
We follow the sanitation and food safety standards set by Servsafe. This includes but is not limited to a pet-free kitchen, properly sanitized tools and hands along with gloves where needed, and ingredients being kept at safe temperatures. Food safety is of the upmost importance to us.
